Cheesy Meatball Bake

Method

  1. Mix all the meatball ingredients together in a bowl. You can prepare the mixture ahead and refrigerate it until ready to cook.

  2. With wet hands, shape into meatballs about 1 inch across.

  3. Drizzle oil in a skillet and sear the meatballs until browned on the outside. They will finish cooking in the oven. Transfer to a paper towel-lined plate.

  4. Heat the oven to 375°F.

  5. Wipe most of the grease from the pan. Add the marinara ingredients and simmer for about 5 minutes.

  6. Blend the sauce with an immersion blender or carefully transfer it to a blender, then return it to the pan if needed.

  7. In an oven-safe baking dish, layer sauce, meatballs, more sauce, mozzarella and Parmesan.

  8. Cover with foil and bake for 25-30 minutes, until the meatballs are cooked through.

  9. Serve over pasta, in rolls for meatball subs, or on their own. Finish with basil if desired.
